I don't know of any single book which covers this subject in its entirety. Glover covers the administration of the army in "Wellington as Military Commander", Oman covers a lot of material in "Wellington's Army". More information is scattered through Haythornthwaite's "Weapons and Equipment...", Barthorp's "Wellington's Generals", Fosten's "Wellington's Infantry", and other points crop up in odd places in many of the books about the Peninsular War.
